Shahi tukda means “royal piece”, and it lives up to the name: bread fried until golden, soaked in
sweet syrup and buried under thickened milk. It is the dessert course of our Mughlai tasting menu.
The classic dish is built from three things. Slices of bread are fried in ghee until crisp, dipped in a sugar syrup that is often scented with cardamom or saffron, and then topped with rabdi — milk simmered slowly until it thickens and gathers layers of cream. Nuts go on last.
The result is crisp at the edges and soft in the middle, somewhere between a bread pudding and a milk sweet.
Shahi tukda belongs to the Mughlai and Nawabi kitchens of north India, and in Hyderabad the same idea is known as double ka meetha, after double roti, the everyday word for a loaf of bread. You will often hear that it was invented for a particular emperor. No contemporary source records that, so treat it as a good story rather than history.
What is certain is that it is a feast dessert, made for weddings and for Eid, and that it is one of the dishes people most associate with Mughlai food.
Our menu calls it Shahi Tukda Taj-e-Zaika: elegant layers of rich shahi tukda crowned with airy Banarasi-style rabdi foam. Rather than a heavy blanket of rabdi, the topping is lightened into a foam, so the bread underneath stays the centre of the dish.
It is served a la carte and as the dessert course of the Mughlai Tasting Menu.

They are close relatives - both are fried bread soaked in syrup and finished with sweetened milk. Double ka meetha is the Hyderabadi name and is often made softer and more soaked; shahi tukda is the name used across the Mughlai kitchens of north India.
No egg is used anywhere in the Tajnuma kitchen. The dish is pure vegetarian; it contains wheat (the bread) and dairy.
Yes. It is one of the dessert courses of the Mughlai Tasting Menu, and it can also be ordered on its own.
