A Mughlai Restaurant in Agra, the City of the Mughal Court

Agra was the Mughal capital under Akbar, Jahangir and Shah Jahan, and Mughlai cooking grew up in their kitchens. Tajnuma cooks that food in Tajganj, a short way from the Taj Mahal — kebabs, koftas, slow dals, biryani and royal desserts — and we cook all of it without meat. See the full menu.

What Makes Food “Mughlai”

Mughlai cooking is the court food of the Mughal emperors: Persian and Central Asian ideas about rice, breads, dried fruit and slow cooking, meeting Indian spices, dairy and grains. Its hallmarks are rich gravies built on nuts and cream, saffron, dishes finished on low heat, and breads like sheermal.

We have written about where it came from in From Persia to Agra and about how the Mughal kitchen worked.

Mughlai Without Meat Is Not New

The Mughal imperial kitchen had a named class of meatless dishes, and Akbar kept a growing number of days without meat over his reign — his court chronicler recorded both. Read Akbar’s Vegetarian Days and the history of vegetarian Mughlai food.

So at Tajnuma the galouti is made with mushroom or rajma, the nihari with jackfruit in season, and the keema with soya. The techniques and the spice are Mughlai; the kitchen is entirely vegetarian.

Where to Start on the Menu

For a first visit: a galouti kebab with flaky parantha, Mawa Paneer Kofta, Dal Tajnuma slow-cooked black lentils, a biryani, and Shahi Tukda or Daulat ki Chaat to finish. Our guide to Mughlai vegetarian dishes to try explains each of them.

For the whole arc in one sitting, Chef Mukesh’s Mughlai tasting menu runs course by course from amuse bouche to sheermal and kulfi.
