Chole bhature is one of the most loved vegetarian plates in north India, and Agra eats it enthusiastically.
Our version keeps the robust chickpeas and swaps the deep-fried bhatura for one toasted on the tawa.
The dish is two things on one plate: chole, chickpeas cooked dark and sharp with spice, and bhatura, a leavened bread that is usually deep-fried until it puffs into a golden dome. Raw onion, pickle and a green chilli come alongside. It is morning food, lunch food and comfort food all at once.
We have written about where Agra goes for it in our journal — see chole bhature in Agra.
The menu describes Agra Wale Chole with Tawa Bhatura as robust, spice-infused chickpeas served with buttery tawa-toasted bhaturas, finished with pungent pickled onions and a blistered green chilli. Toasting the bhatura on the tawa gives it a buttery crust without the full deep-fry.
It is on the Shahi Chaat section of the a la carte menu and is also one of the choices in the Indian Street Food Tasting Menu.
