An Entirely Vegetarian Kitchen: What It Means at Tajnuma

“Pure veg” is written on a lot of signboards in India, and it does not always mean the same thing. At Tajnuma it means something specific and easy to check: no meat, no fish and no egg is stored, prepared or cooked anywhere in the building. This is what that looks like in practice, and why it matters more than it might seem.

A Vegetarian Kitchen, Not a Vegetarian Menu

Plenty of restaurants offer vegetarian dishes alongside meat ones, and many of them do it carefully. But when both are cooked in one kitchen, the vegetarian dish is sharing a tandoor, a grill, oil, ladles and hands with everything else. For some guests that is fine. For many — for religious reasons, for family reasons, or simply because they would rather not have to think about it — it is not.

An entirely vegetarian kitchen removes the question. There is no separate section to trust and no need to ask how a dish was handled before it reached the table, because there is nothing else in the building it could have been handled alongside.

No Egg, Either

Egg is where many “vegetarian” kitchens quietly draw a different line: in naan dough, in some breads, in desserts, in mayonnaise-based sauces. In India a large number of vegetarians do not eat egg, and it is often the one ingredient a guest has to ask about.

At Tajnuma the answer does not change dish to dish. There is no egg on site, so the breads, the desserts and the sauces are egg-free by default.

Jain Guests

Jain food goes further than vegetarianism — most strictly, it avoids onion, garlic, potato and other root vegetables. A vegetarian kitchen is the right starting point for that, but it is not the same thing, so Jain preparation is something you ask for: tell your server when you order, and the kitchen prepares the dish accordingly where it can. Mixed Groups and Family Occasions

The practical benefit people mention most is the simplest one: you can invite anyone. A family gathering where some relatives are strict vegetarians, a corporate dinner with guests whose preferences you do not know, a wedding party with a Jain grandparent — nobody has to be seated apart, and nobody has to be the one asking questions. That is a large part of why we host private dinners and events.

Mughlai Food Was Never Only Meat

The obvious objection is that Mughlai cooking is famous for its meat. It is — but the Mughal court's own records kept a named class of dishes cooked without meat, and the emperor Akbar abstained from meat on a growing number of days. In the kitchen, the work is in giving vegetarian ingredients the same treatment: curd and lentils set into kebabs, jackfruit slow-grilled in achari masala, mushroom made into galouti, paneer and mawa rolled into koftas, and biryani sealed and finished on dum. None of it is a substitute for something else. It is the cuisine, cooked one way.
